The Saint-Georges logo represents the saint slaying the dragon :
One day, George, who was an officer in the Roman army, came across a town terrorized by a dragon which devoured the animals and demanded a daily tribute of two young people chosen at random. George arrived on the day the king’s daughter was about to become the monster’s next victim. He went into battle with the beast and, with God’s help, triumphed. George’s legendary dual with the dragon is a subject that has been widely represented, especially in the 13th century. Saint George symbolizes the victory of Good over Evil. Across all of Christendom, he is the patron saint of knights.
